Pastor's Companion

A Tequila Sour That Tastes Like Taco Night

You know how tacos al pastor have that sweet-savory-spicy thing going on with the pineapple and chiles? This cocktail does the same trick in liquid form, and it's honestly one of the best taco pairings I've found. The Pastor's Companion builds on reposado tequila's caramel notes with tart tamarind and warming ginger syrup, creating this sweet-sour balance that cuts right through the richness of al pastor. That little mezcal float on top isn't just for show. It adds a whisper of smoke that echoes the charred edges from the trompo without overwhelming everything else. The Tajín rim is totally optional, but if you're already going full taco night mode, why not commit? It ties the whole thing together with that chile-lime punch. This is the drink to make when you're doing proper taco Tuesday with friends or just craving something more interesting than a basic margarita. Mix one up and see how well tamarind plays with agave.

  • 0.5 ozginger syrup
  • 0.25 ozmezcal
  • 1 pinchsalt
  • 1 wholeTajín (for rim, optional)

Method

  1. 1.Rim half of a rocks glass with Tajín if desired
  2. 2.Add reposado tequila, lime juice, tamarind concentrate, ginger syrup, and salt to shaker with ice
  3. 3.Shake vigorously for 15 seconds
  4. 4.Strain over fresh ice into the prepared rocks glass
  5. 5.Float the mezcal on top by pouring gently over the back of a barspoon
GarnishLime wheel and dried chile

Note: Perfect pairing for tacos al pastor. The reposado's oak complements tamarind's complexity, while ginger echoes the spices in al pastor. The mezcal float provides subtle smokiness reminiscent of the trompo. If using tamarind concentrate paste, thin it slightly with water first. If using tamarind syrup (already sweetened), reduce or omit the ginger syrup.
